CIBO Espresso

In 1996, the desire to provide a ‘simply Italian’ experience for customers prompted Roberto Cardone, Salvatore Pepe, Angelo Inglese and Claudio Ferraro to combine their skills to open CIBO Ristorante in Adelaide.

Bringing a touch of Italy to Adelaide

The restaurant quickly became a dining landmark renowned for its high quality, traditional Italian menu including cakes, pastries, gelato, pizza, wood oven bread made on the premises and outstanding coffee.

After the resounding success of their Ristorante, the CIBO founding fathers secured a corner site in Rundle Street in the heart of Adelaide in 2000, and opened the first CIBO Espresso Bar. Although Espresso Bar culture was still in its infancy in Australia, the CIBO directors were convinced that people were ready for a real Italian coffee bar, where patrons were offered artisan made Italian products in a modern bar environment – an echo of the many coffee bars which line the winding streets and piazzas of Rome.

Coffee lovers were quick to catch on to the CIBO espresso blend that poured from the espresso machine day and night, and CIBO Espresso bars began to open in key locations all over the city.  

In 2010, CIBO Espresso relocated to Windsor Gardens consolidating all six areas of the business: coffee, the kitchen, administration, gelati, storage and management, into the one building. The move to Windsor Gardens truly reflects the business as a whole, and will help to maintain quality, control and efficiency.

Pitcher Partners has been involved with CIBO since 2003 through Principal Jeff Allen. Jeff and the Adelaide firm have provided compliance and business advisory services to CIBO over the last 8 years, including advice in the early stages of their transition from company owned outlets to a fully fledged franchise operation. This provided many challenges and we were asked to:

  • assist in raising additional capital,
  • provide advice on appropriate legal and tax structures, and
  • offer strategic input to the CIBO Espresso Board.

Although CIBO Espresso has expanded to 16 outlets in South Australia, and 2 locations in Brisbane, the original passion for sharing traditional and authentic Italian food and coffee remains.

We are delighted to be involved with a business which has become such a successful and iconic South Australian brand.
